Spinach, beetroot or cabbage with ground walnuts, garlic and herbs: pkhali is a useful place to begin getting to know Georgian food. The vegetables change, while the seasoned walnut mixture connects the different versions.

Begin with a mixed plate

A selection lets you taste the differences between the vegetables. Read the dish name as a starting point and ask about the version being served, rather than assuming every kitchen uses an identical recipe.

Ask about the ingredients

Walnuts are central to many versions of pkhali. Ask the person preparing or serving the dish about its actual ingredients, particularly when you have an allergy or another dietary requirement. A menu category is not an ingredient guarantee.

Two other names on the menu

Khachapuri

Cheese bread with regional forms. Check which version is being offered.

Khinkali

Filled dumplings. Ask about the filling rather than assuming every version contains meat.

Put a meal into a city day

Leave enough time between the walk and the next plan to sit down and explore the food. The city itinerary connects a first meal with streets, courtyards and a quieter garden.
