Kharcho can mean different things on a Georgian menu. A regional name helps: the Samegrelo version described by Georgia Travel is a walnut-rich meat dish, while the same source distinguishes it from a separate Mingrelian kharcho soup. Do not assume the word alone tells you whether the bowl is a broth or a thicker stew.

Read the whole menu name

Look for “Megrelian” or “walnut” and scan the menu description. The Samegrelo walnut version combines meat, walnuts, coriander, garlic, vinegar and smoked ajika. Georgia Travel describes it as often served with ghomi, a cornmeal side. That pairing is a useful clue to the stew style, not a guarantee about every restaurant’s portion or recipe.

A third label can add to the confusion: Georgia Travel calls a dark duck stew “black kharcho.” Its description also pairs the western Georgian dish with ghomi. If a menu uses “black kharcho,” ask whether it is the duck version; the colour word does not tell you the meat on its own.

Ask before you order

  • Is this the soup or the Samegrelo walnut version?
  • Which meat is used today? The regional guide describes beef, while also noting chicken versions.
  • Does it contain walnuts, and how hot is the ajika? Ask the kitchen about ingredients if you have an allergy or dietary restriction.
  • Does the dish come with ghomi, or should you order it separately?

A menu that says only “kharcho” leaves the key distinction unresolved. Ask for the preparation being served, then choose based on whether you want soup, walnuts or chilli. The word is a starting point for a question, not a reliable recipe label.
